  • 1 lb ground chicken (or ground turkey) Use ground turkey for a leaner alternative.
  • 1/4 cup whole wheat panko breadcrumbs Regular panko or crushed crackers can be substituted.
  • 1 unit egg For binding the meat mixture.
  • 1/3 cup sun-dried tomatoes (packed in oil, chopped) Can be substituted with diced roasted red peppers.
  • 1/4 cup feta cheese (crumbled) Adds a tangy flavor.
  • 1/4 cup parmesan cheese (grated) Enhances the savory taste.
  • 2 cloves garlic (minced) Or 1/2 teaspoon garlic powder.
  • 1/4 cup green onions (chopped) For added freshness.
  • 2 tablespoons fresh parsley (chopped) Can use other fresh herbs as desired.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Add red pepper flakes for a spicy kick if desired.
  • 1 squeeze lemon Optional, adds brightness.

Preparation

  • Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or spray it with non-stick spray.
  • In a large bowl, mix together the ground chicken, panko breadcrumbs, egg, sun-dried tomatoes, feta cheese, parmesan cheese, minced garlic, green onions, parsley, salt, and black pepper until well combined.
  • Using a small to medium cookie scoop (about 1.5 tablespoons), shape the mixture into 2-inch balls and place them on the baking sheet, leaving space between each.

Cooking

  • Bake the meatballs in the preheated oven for about 20 to 25 minutes, until they are lightly browned and cooked through.
  • Once out of the oven, you can sprinkle a little lemon juice over the top for added brightness if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To freeze, arrange on a baking sheet and freeze until solid, then transfer to a freezer-safe container. Thaw in the refrigerator before reheating.
