Ingredients
  

Main Ingredients

  • 1.5 lbs Chicken breasts, boneless & skinless, cut into bite-sized pieces
  • 3 tbsp Extra virgin olive oil, divided for cooking
  • Salt & black pepper, to taste
  • 2 medium Zucchini, sliced into half-moons
  • 2 Red bell peppers, diced into chunks
  • 1 large Red onion, sliced into strips
  • 2 cups Cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 4 cloves Garlic, minced
  • 1/4 cup Sun-dried tomatoes, chopped
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 Lemon, juice only
  • 0.5 cup Feta cheese, crumbled
  • 2 tbsp Fresh parsley, optional garnish

Preparation

  • Prep ingredients and chop everything before cooking.

Cooking

  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the chicken until golden and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil. Sauté the onions, garlic, and mixed vegetables (zucchini, bell peppers) until they are tender, about 5 minutes.
  • Combine the chicken back into the skillet with the sautéed vegetables. Season with salt, pepper, oregano, basil, and thyme. Toss everything together.
  • Add the lemon juice, Kalamata olives, sun-dried tomatoes, and feta cheese. Stir to combine and cook for another minute until everything is heated through.
  • Serve warm, garnished with fresh parsley if desired.

Notes

For drier chicken, try marinating it in the olive oil, lemon juice, and herbs for about 30 minutes before cooking. Feel free to add or swap out vegetables based on your preference or what's in season. If you want extra flavor, throw in some capers or a splash of balsamic vinegar! Store any leftovers in an airtight container in the refrigerator for up to 3 days.
