Ingredients
  

Pasta and Main Ingredients

  • 8 oz Angel hair pasta
  • 2 cups Fresh spinach About two cups when loosely packed
  • 1 cup Cherry tomatoes
  • 1/2 cup Sliced olives Briny olives enhance the flavor
  • 1 lb Juicy marinated chicken You can substitute with another protein or chickpeas
  • 2 cloves Garlic, minced
  • 1-2 tbsp Lemon juice Adjust to taste
  • 1/2 cup Feta cheese, crumbled For topping
  • 2 tbsp Olive oil For sautéing

Instructions
 

Cooking the Pasta

  • Cook the angel hair pasta according to package instructions.
  • Once al dente, drain and set aside.

Preparing the Chicken and Vegetables

  • While the pasta cooks, heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add 2-3 minced garlic cloves and sauté for about 1-2 minutes until fragrant.
  • Introduce the marinated chicken to the pot and sauté for 5-7 minutes until cooked through.
  • Stir in the cherry tomatoes and spinach, along with the sliced olives. Cook for 3-4 minutes.

Combining

  • Add the drained angel hair pasta to the pot and toss gently to combine.
  • Drizzle with fresh lemon juice and sprinkle with crumbled feta cheese just before serving.

Notes

Serve hot and garnish with additional feta or a sprig of fresh basil. This dish pairs beautifully with white wine or sparkling water. Store leftovers in an airtight container in the fridge for 3-4 days.
