Cooking Instructions

  • In a large pot, heat a splash of olive oil over medium heat.
  • Add the rice and sauté for a couple of minutes until slightly toasted.
  • Pour in the vegetable broth (or water), add chickpeas, and bring to a boil.
  • Reduce heat to low, cover, and let it simmer for 15-20 minutes, or until the rice is tender.
  • Remove from heat, fluff the rice with a fork, and stir in the fresh herbs, lemon juice, and zest.
  • Taste, then adjust seasoning with salt and pepper to your liking, and serve warm.
