Preparation

  • Preheat the oven to 425°F (220°C).
  • Slice the eggplants into 1-inch rounds and place them in a large bowl.
  • Add the olive oil, garlic powder, smoked paprika, ground cumin, dried oregano, salt, and pepper to the bowl.
  • Toss the eggplant slices in the oil and spices until well coated.

Cooking

  • Arrange the eggplant slices on a baking sheet in a single layer, ensuring they are not overlapping.
  • Roast in the oven for about 25-30 minutes or until the eggplant is golden brown and tender.
  • Garnish with fresh chopped parsley before serving.

Notes

For extra flavor, let eggplant slices sit with salt for 30 minutes before rinsing and drying. You can customize the spice blend to your liking. Mixing in feta cheese during the last few minutes of roasting adds a creamy touch.
