Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Wash the sweet potatoes thoroughly, peeling if desired, then cut them into even-sized cubes.

Cooking

  • In a large bowl, combine the sweet potato cubes with olive oil, salt, and pepper. Toss until fully coated.
  • Spread the cubes in a single layer on the baking sheet and roast for about 25-30 minutes until tender and golden brown.
  • Remove from the oven and sprinkle with crumbled feta cheese and chopped olives while still hot.
  • Finish off with a sprinkle of freshly chopped herbs before serving.
