  • 2 medium zucchinis
  • 2 medium yellow squashes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Preparation

  • Using a vegetable peeler or spiralizer, create long ribbons from the zucchinis and yellow squashes. Aim for about 2-3 cups of ribbons total.
  • In a large bowl, gently combine the zucchini and squash ribbons with the halved cherry tomatoes, sliced olives, and crumbled feta cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  • Carefully pour the dressing over the salad mixture and toss gently to combine.
  • Garnish with fresh basil or parsley leaves.
  • Enjoy your salad immediately or chill it in the refrigerator for about 30 minutes.

Notes

Store any leftover salad in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended due to the high water content of zucchini and squash.
