Dip Ingredients

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cream cheese, softened Make sure it's softened for easy mixing.
  • 1/2 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder Adjust for spice level.
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro (optional) For added freshness.
  • Tortilla chips for serving For dipping.

Preparation

  • In a large bowl, combine the cream cheese, sour cream, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper.
  • Stir in the corn and shredded cheese until well mixed.
  • If desired, fold in the chopped cilantro for added flavor.
  • Transfer the dip to a serving bowl and refrigerate for at least 15 minutes to let the flavors meld.

Serving

  • To serve, place the dip in a large bowl and surround it with tortilla chips.
  • Garnish with additional cilantro or a sprinkle of chili powder for a pop of color.

Notes

If storing leftovers, keep in an airtight container in the refrigerator for up to 3 days. Stir before serving as ingredients may separate.
