Main Ingredients

  • 4.5 cups chopped cooked chicken
  • 4 oz cream cheese (room temperature)
  • 1 cup cottage cheese
  • 0.5 cup sour cream
  • 1 can unsalted cream of chicken soup (10.5 oz)
  • 0.25 tsp garlic powder
  • 0.25 tsp dried onion powder
  • 1 sleeve Ritz crackers (crushed)
  • 5 tbsp butter (melted)

Preparation

  • Preheat your oven to 350°F. Lightly spray a 9×9-inch baking dish with cooking spray and set it aside.
  • In a large bowl, combine the chopped chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix well until all ingredients are combined.
  • Spread the chicken mixture into the prepared baking dish.

Topping

  • In a separate bowl, combine the crushed Ritz crackers with melted butter. Mix until the crackers are evenly coated.
  • Sprinkle the cracker mixture over the chicken mixture in the baking dish.

Baking

  • Bake uncovered in the preheated oven for 30 to 40 minutes, or until the casserole is heated through and the topping is golden brown.

Notes

Serve hot on its own or with a simple green salad or steamed vegetables. Use rotisserie chicken for a quick option. Add green onions or shredded cheese for extra flavor. For a crunchier topping, increase the amount of crushed crackers or add crushed potato chips.
