  • 2 tablespoons butter Unsalted recommended
  • 1 cup heavy cream For a richer sauce

  • 1/2 cup ricotta cheese Can substitute with cream cheese for a different flavor

Instructions
 

Cooking Gnocchi

  • Cook the potato gnocchi according to package instructions until they float to the surface, which usually takes about 2-3 minutes. Drain and set aside.

Making the Sauce

  • In a large skillet, melt 2 tablespoons of butter over medium heat until bubbly, which can take around 1-2 minutes.
  • Add 1 cup of heavy cream to the skillet and bring it to a gentle simmer, stirring occasionally for 2-3 minutes.
  • Stir in 1/2 cup of grated Parmesan cheese and 1/2 cup of ricotta cheese, mixing until the cheese has melted and the sauce is creamy, about 3-5 minutes.
  • Season the sauce with salt and pepper to taste, giving it a good stir.
  • Add the cooked gnocchi to the sauce, gently folding to coat the gnocchi evenly, approximately 1-2 minutes.

Serving

  • Serve hot, garnished with freshly chopped parsley for a touch of color and flavor.

Notes

Store leftover gnocchi in an airtight container in the fridge for up to 3 days. To reheat, warm on the stovetop adding a splash of cream or water to maintain creaminess.
