For the Pizzas

  • 4 king-sized king-sized English muffins
  • 1 tablespoon olive oil for brushing the muffins
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon butter for scrambling eggs
  • 6 large eggs
  • 2 tablespoons milk for the egg mixture
  • 6 slices bacon
  • 1.5 cups cheddar cheese shredded
  • 1.5 cups shredded Monterey jack cheese

Preparation

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.
  • Arrange the bacon slices in a single layer on the baking sheet and cook for 15 minutes until slightly crispy.
  • Pat the cooked bacon dry and crumble it into small pieces.
  • In a skillet, melt the butter over medium heat. In a bowl, whisk together the eggs and milk, then pour into the skillet and scramble until just set.
  • Open the English muffins and brush the cut sides with olive oil. Sprinkle with garlic and onion powder.

Assembly and Baking

  • Divide the cheddar cheese, scrambled eggs, and crumbled bacon among the muffin halves. Top with shredded Monterey jack cheese.
  • Bake in the oven for 10 minutes until the cheese is melted and bubbly.
  • Allow the mini breakfast pizzas to cool before serving.

Notes
