Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, mix the graham cracker crumbs, 2 tablespoons of sugar, and melted butter until combined. Press mixture firmly into the bottom of mini cheesecake pans.
  • In a large bowl, beat the softened cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
  • Add the eggs one at a time, beating well after each addition. Mix in the sour cream.
  • Pour the cream cheese mixture over the prepared crusts.

Baking

  • Bake for 20-25 minutes, until the center is set but still slightly jiggly.
  • Let cheesecakes cool in the pan, then refrigerate for at least 2 hours before serving.
  • Top with colorful sprinkles before serving.

Notes

Allow cheesecakes to chill thoroughly to enhance flavor and texture. If using low-fat cream cheese, texture may be slightly altered.
