Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • 1/2 tsp salt

Wet Ingredients

  • 1 large egg
  • 3/4 cup milk
  • 2 tbsp butter melted
  • 1 tsp vanilla extract

Instructions
 

  • In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  • In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  • Drop small spoonfuls of batter onto the skillet to form mini pancakes.
  • Once bubbles form on the surface (about 1-2 minutes), flip the pancakes and cook for another 1-2 minutes until golden brown.
  • Serve immediately with your favorite toppings like syrup, fresh fruit, or whipped cream.

Notes

For extra fluffiness, avoid overmixing the batter. Store leftover pancakes in an airtight container in the fridge for up to 3 days, or freeze for longer storage.
