Mint Chocolate Chip Buttercream Frosting

This delightful Mint Chocolate Chip Buttercream Frosting combines the classic flavors of mint and chocolate, adding a refreshing twist to any dessert.

Ingredients
  

For the frosting

  • 1 cup butter (softened, at room temperature) Ensure butter is softened for best results.
  • 2 tablespoons heavy cream (or half & half, or milk) Can substitute with half & half or regular milk.
  • 1/4 teaspoon peppermint extract Adjust to taste for a stronger mint flavor.
  • 2 to 3 drops green food coloring For color, adjust as desired.
  • 4 cups confectioners sugar Start mixing on low speed to avoid a sugar cloud.
  • 1 pinch salt (optional, to taste) Can add to taste.
  • 2/3 cup mini chocolate chips (milk chocolate, semi-sweet chocolate, or dark chocolate chips) Feel free to add more for extra chocolatey goodness.

Preparation

  • Using the paddle attachment in your stand mixer (or in a bowl using a hand mixer), beat the room temperature butter for about 5 or 6 minutes, or until the color becomes light and pale and the texture is creamy.
  • Add the peppermint extract as well as 1 cup of powdered sugar. Turn the mixer to medium speed and beat until the ingredients are well incorporated.
  • Add in your green food coloring and alternate between drizzling heavy cream and adding the rest of the confectioners' sugar while continuing to mix.
  • After you have added all of the powdered sugar, continue to beat the buttercream at medium speed for an additional 2 to 3 minutes until it becomes light in color, fluffy, and creamy.
  • Taste and adjust with a pinch of salt as needed.
  • Fold in the mini chocolate chips then spread the frosting onto your cupcakes, cakes, or desserts.
  • Optionally, scoop the frosting with an ice cream scoop to look like a frozen dessert.

Notes

To store any leftover frosting, place it in an airtight container and refrigerate for up to one week. Bring it back to room temperature and stir before using it again. For a chocolate version, substitute 1 cup of confectioners' sugar with cocoa powder.
