Ingredients
  

Eggplant Preparation

  • 1 large large eggplant Cut into 2-inch thick rounds.

Miso Sauce

  • 3 tbsp white miso
  • 2 tbsp mirin
  • 2 tbsp sake (optional) Can be omitted without significant impact on flavor.
  • 1 tbsp grapeseed oil Can substitute with any neutral oil.
  • 1 tbsp honey Increase for a sweeter glaze.
  • 1 tbsp dark soy sauce
  • 1 clove minced garlic

Garnish

  • Toasted white and black sesame seeds
  • Green onions

Instructions
 

Preparation

  • Preheat your air fryer to 375 degrees on Air Fry mode.
  • In a medium-sized bowl, combine all ingredients for the miso sauce except the eggplant. Whisk well and set aside.
  • Cut the eggplant into 2-inch thick rounds and score them diagonally in a crisscross pattern.
  • Generously slather the prepared miso sauce on top of the eggplant rounds.

Cooking

  • Air fry the eggplants at 375 degrees for 15 minutes or until cooked through.

Serving

  • Garnish with sesame seeds and green onions before serving. Enjoy warm as a main dish or side.

Notes

For extra flavor, let the glazed eggplant sit in the miso sauce for about 30 minutes before cooking. Score the eggplant well to allow the sauce to seep in better.
