  • 1.5 cups chocolate cookie crumbs Can blend chocolate wafers in a food processor for a homemade option.
  • 1/3 cup butter, melted

For the Filling

  • 2 cups heavy cream For a lighter version, substitute half with Greek yogurt.
  • 1 cup powdered sugar
  • 1 cup chocolate chips Use high-quality chocolate for best flavor.
  • 4 large eggs Make sure they are at room temperature.
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine chocolate cookie crumbs and melted butter, mixing until well combined.
  • Press the mixture into the bottom of a 9-inch pie pan firmly to form the crust.
  • Bake the crust for 10 minutes, or until set, then let cool completely.

Making the Filling

  • In a saucepan over low heat, melt the chocolate chips, stirring constantly until smooth.
  • In a mixing bowl, whisk the eggs, granulated sugar, and vanilla extract until light and combined.
  • Gradually stir in the melted chocolate until fully incorporated.
  • Pour the chocolate filling into the cooled crust and bake for an additional 30 minutes, or until the filling is just set and has a slight jiggle in the center.

Finishing Touches

  • Let the pie cool at room temperature, then refrigerate for at least 2 hours to firm up.
  • Before serving, whip the heavy cream with powdered sugar until soft peaks form and spread it over the chilled pie.

Notes

Serve chilled, garnishing with whipped cream or chocolate shavings. For a coffee lover's touch, pair with freshly brewed coffee or espresso.
