  • 1 large egg, beaten Substitutable with unsweetened applesauce or flaxseed mixture.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can be replaced with whole wheat flour for a healthier option.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir in the melted butter.
  • Mix in the baking soda and salt.
  • Add the sugar, beaten egg, and vanilla extract, and mix until combined.
  • Stir in the flour until just incorporated.
  • Pour the batter into a greased loaf pan.

Baking

  • Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool before serving.

Notes

Serve with butter or cream cheese. For longer storage, wrap tightly and refrigerate or freeze in slices.
