  • 3 overripe bananas, mashed Use very ripe bananas for the best flavor and moisture.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar For a sweeter bread, add an extra 1/4 cup.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Be careful not to overmix the batter.
  • 1/2 cup walnuts, chopped Can substitute with pecans or exclude entirely for nut allergies.
  • 1/2 cup raisins Can swap with other dried fruits like cranberries or cherries.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  • In a mixing bowl, mash the overripe bananas with a fork until smooth.
  • Stir the melted butter into the mashed bananas.
  • Mix in the baking soda and salt.
  • Stir in the sugar, beaten egg, and vanilla extract.
  • Mix in the flour until just incorporated.
  • Fold in the walnuts and raisins.
  • Pour the batter into the prepared loaf pan.

Baking

  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Pairs well with coffee or tea. To keep fresh, wrap tightly in plastic wrap or foil for up to three days at room temperature. Can freeze for about three months if sliced beforehand.
