Mozzarella-Stuffed Onion Rings with Garlic Butter

Ingredients
  

Onion Rings

  • 2 large sweet onions cut into thick rings
  • 8 low-moisture mozzarella sticks cut to fit inside onion rings

Breading Station

  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 2 cups panko breadcrumbs
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper

Garlic Butter

  • 4 tbsp butter
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Peel and slice onions into ½ inch thick rings. Separate into pairs of rings with space for stuffing.
  • Fit mozzarella sticks between pairs of onion rings. Press gently to secure.
  • Set up dredging station with flour, beaten eggs, and panko mixed with Italian seasoning, garlic powder, salt, and pepper.
  • Dip each stuffed ring in flour, egg, and then seasoned panko. Press crumbs firmly.
  • Freeze breaded rings on a tray for at least 30 minutes.
  • Fry in oil at 350°F for 2–3 minutes per side or bake at 425°F for 15–18 minutes, flipping halfway. Air fry at 375°F for 12–14 minutes.
  • Melt butter in a saucepan, sauté garlic until fragrant, then drizzle over cooked onion rings. Top with parsley and serve.

Notes

Freeze extra rings before cooking for a quick snack later. Use different cheeses or spice up the breading for variations.
