  • 2 cups old-fashioned oats
  • 1 ½ cups milk (or almond milk for dairy-free)
  • 1 large apple, diced
  • 2 large eggs Can substitute with flax eggs for a vegan option.
  • ¼ cup maple syrup or honey Adjust for extra sweetness if desired.
  • 1 tsp vanilla extract
  • 1 tsp cinnamon Add more for extra flavor.
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup chopped walnuts or pecans (optional) Add for extra crunch.

Instructions
 

Preheat & Prep

  • Preheat oven to 350°F (175°C). Grease a baking dish.

Mix the Ingredients

  • In a large bowl, whisk together the eggs, milk, maple syrup, and vanilla extract.
  • Stir in the oats, baking powder, cinnamon, and salt.
  • Fold in the diced apples and nuts if you are using them.

Bake

  • Pour the mixture into the greased baking dish and spread it evenly.
  • Bake for 30-35 minutes, or until the top is golden and the center is set.

Serve

  • Let cool for 5 minutes before serving. Enjoy it warm, or refrigerate and reheat for a quick breakfast.

Notes

Serve warm with a drizzle of maple syrup or yogurt. Pairs well with fresh fruit or extra cinnamon.
