  • 4 pieces eggs Hard-boiled
  • 2 tablespoons spicy brown mustard or any other mustard you prefer Adjust according to taste
  • 1 teaspoon apple cider vinegar
  • a pinch salt
  • cup water More can be added for desired consistency

Preparation

  • Place 4 eggs in a pot of water, bring it to a boil, then lower the heat and let them simmer for about 10-12 minutes.
  • Transfer the boiled eggs to a bowl of ice water to cool and peel when cool enough to handle.

Blending

  • Place the peeled hard-boiled eggs, spicy brown mustard, apple cider vinegar, salt, and water into the blender jar.
  • Secure the lid and blend on medium speed for about 30-60 seconds until smooth and creamy.
  • Add more water if the mayo is too thick and blend briefly.
  • Taste and adjust with more mustard or vinegar for a tangier taste, then blend quickly to mix.

Notes

Store the mayo in an airtight container in the refrigerator for about 5-7 days. Always check for freshness before using. Adjust mustard and vinegar to find the flavor you like best. Use a high-speed blender for a smooth consistency.
