Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder Use fresh for best results
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk Can substitute with buttermilk
  • 1 large egg
  • 2 tablespoons melted butter Plus more for cooking
  • 1 teaspoon vanilla extract Optional

Instructions
 

Preparation

  • In a medium bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
  • In another bowl, whisk the wet ingredients: milk, egg, melted butter, and vanilla until smooth.

Making the Batter

  • Pour the wet mixture into the dry ingredients. Gently stir until just combined. A few lumps are fine.

Cooking

  • Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter.
  • Pour about 1/4 cup of batter for each pancake.
  • Cook until bubbles form on the surface and edges look set, about 2 minutes.
  • Flip and cook another 1–2 minutes until golden brown.

Serving

  • Stack and serve the pancakes warm with butter, maple syrup, or your favorite toppings.

Notes

For leftovers, let cool, then store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze with parchment paper between pancakes for up to 2 months.
