Pie Filling

  • 2 cups fresh or canned cherries If using fresh cherries, ensure they are ripe.
  • 1 cup sugar
  • 1/4 cup cornstarch Can substitute with all-purpose flour.
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Pie Crust

  • 1 pie crust store-bought or homemade Consider a lattice crust for presentation.
  • 1 tablespoon butter Optional, for dotting on top of the filling.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the cherries, sugar, cornstarch, lemon juice, and vanilla extract until well combined.
  • Roll out the pie crust to fit your pie dish, pressing it gently into the bottom and sides.
  • Pour the cherry mixture into the prepared pie crust, spreading it evenly, and dot the top with small pieces of butter.
  • Cover the filling with a second pie crust, pinch or crimp the edges to seal, and cut slits on top to allow steam to escape.

Baking

  • Bake the pie in the preheated oven for 30-35 minutes, or until the crust is golden-brown and juices are bubbling.
  • Cool the pie for at least 15-20 minutes before slicing to allow the filling to set.

Notes

Serve warm or at room temperature with whipped cream or ice cream. Store leftovers in the refrigerator for 3-5 days or freeze for up to 3 months.
