  • 2 pounds potatoes Waxy potatoes like red or Yukon gold are best.
  • 3 pieces hard-boiled eggs, chopped
  • 1 cup mayonnaise Adjust the amount to taste.
  • 1 tablespoon mustard
  • 1/2 cup celery, diced
  • 1/2 cup onion, diced
  • to taste Salt and pepper
  • Paprika for garnish For color and flavor.

Preparation

  • Boil the potatoes in salted water until tender. Drain and let cool.
  • Once cooled, peel and chop the potatoes into bite-sized pieces.
  • In a large bowl, combine the chopped potatoes, eggs, celery, and onion.

Dressing

  • In a separate bowl, mix together the mayonnaise, mustard, salt, and pepper.
  • Pour the dressing over the potato mixture and gently fold to combine.

Serving

  • Garnish with paprika before serving. Enjoy!

Notes

Serve chilled or at room temperature. Best eaten within 3 to 5 days. Freezing may alter the texture. Consider mixing in dill pickles or relish for added flavor.
