Ingredients
  

For the Fried Rice

  • 2 cups cooked rice Day-old rice works best.
  • 1/2 cup cooked chicken Can substitute with other protein.
  • 1/4 cup diced onion
  • 1/4 cup frozen peas and carrots
  • 2 tablespoons ketchup Can drizzle more on top before serving.
  • 2 tablespoons soy sauce
  • Salt and pepper to taste Salt and pepper
  • Vegetable oil For cooking.

For the Omelet

  • 4 eggs eggs
  • 2 tablespoons milk

Instructions
 

Preparation

  • In a pan, heat a small amount of vegetable oil over medium heat. Add the diced onion and cook until translucent.
  • Stir in the cooked chicken, peas, and carrots, and cook for another 2-3 minutes.
  • Add the cooked rice to the pan, followed by ketchup and soy sauce. Mix well and cook until heated through. Season with salt and pepper to taste.
  • In a bowl, whisk together eggs, milk, and a pinch of salt.

Cooking

  • In a new pan, add a bit of oil and heat over medium-low heat. Pour in the egg mixture and scramble gently until slightly set but still creamy.

Serving

  • Serve the ketchup fried rice on a plate and top it with the fluffy omelet. Drizzle with more ketchup if desired.

Notes

For a spicy kick, add some chili sauce to the rice. You can also use tofu instead of meat for a vegetarian option. Sprinkle chopped green onions on top before serving for added flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave or stovetop before consuming.
