  • 4 pieces chicken thighs (boneless, skinless) Can substitute with chicken breasts for a leaner option.
  • 1 cup honey BBQ sauce Adjust sweetness to taste.
  • 1 cup chicken broth For moisture and flavor.
  • 1 tablespoon olive oil For frying the chicken.
  • 1 teaspoon garlic powder

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken thighs with salt, pepper, and garlic powder.
  • Add chicken to the skillet and cook until browned on both sides, about 5-7 minutes.

Cooking

  • Pour in chicken broth and honey BBQ sauce, stirring to combine.
  • Add cooked rice to the skillet, mixing everything together.
  • Cover and reduce heat to low, cooking for an additional 10-15 minutes until chicken is cooked through and the sauce is thickened.
  • Garnish with chopped green onions before serving.

Notes

For variations, try adding bell peppers, broccoli, or snap peas. Adjust the BBQ sauce sweetness by adding more or less honey BBQ sauce. For a spicy kick, add red pepper flakes or a splash of hot sauce.
