Main Ingredients

  • 1 lb ground beef (or Italian sausage) Can substitute with ground turkey or a meat substitute.
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 4 cups beef or vegetable broth Use vegetable broth for a vegetarian option.
  • 8 oz rotini pasta Can experiment with different types like penne or fusilli.
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 cups spinach Can substitute with kale or other leafy greens.
  • 1 cup ricotta cheese Can substitute with cottage cheese or cream cheese.
  • 1 cup shredded mozzarella cheese
  • Grated Parmesan cheese for serving

Instructions
 

Cooking

  • In a large pot, cook the ground beef (or sausage) over medium heat until browned.
  • Add the onion and garlic, cooking until the onion is translucent.
  • Stir in the crushed tomatoes, broth, oregano, basil, salt, and pepper. Bring to a simmer.
  • Add the pasta and cook according to package instructions until al dente.
  • In the last few minutes of cooking, stir in the spinach and ricotta cheese until the spinach is wilted.
  • Serve hot, garnished with mozzarella and Parmesan cheese.

Notes

Serve this soup hot in bowls, topped with shredded mozzarella and a sprinkle of grated Parmesan cheese. You can also add some crusty bread or a fresh garden salad on the side for a complete meal.
