  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 cup diced vegetables (bell peppers, spinach, mushrooms, etc.)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) to ensure even cooking.
  • Grease a muffin tin with cooking spray or a light coat of oil.
  • In a large mixing bowl, crack the eggs and whisk them until fully combined. Season with salt and pepper.
  • Add in the diced vegetables and cheese, folding gently to combine.
  • Pour the egg mixture evenly into the muffin cups, filling each about three-quarters full.

Cooking

  • Bake in the preheated oven for 15-18 minutes, or until the eggs are set and lightly golden on top.
  • Let cool for a minute before carefully removing each egg from the muffin tin.

Notes

These Oven Eggs are best served hot but can also be enjoyed warm or at room temperature. They can be stored in an airtight container in the refrigerator for up to 3 days. They can be frozen for up to 2 months.
