  • 4 pieces Chicken thighs Bone-in, skin-on thighs preferred for juiciness.
  • 2 tablespoons Olive oil For rubbing on the chicken.
  • 3 cloves Garlic Minced.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Pepper Freshly ground for best flavor.
  • 1 teaspoon Paprika Add colour and mild flavor.
  • 2 teaspoons Herbs (thyme or rosemary) Fresh or dried, for flavor.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix olive oil, minced garlic, salt, pepper, and paprika.
  • Rub the mixture all over the chicken thighs.
  • Place the chicken thighs on a baking sheet.
  • Sprinkle with herbs of your choice.

Cooking

  • Bake in the preheated oven for 35-40 minutes until the chicken is cooked through and the skin is crispy.

Serving

  • Serve hot with a side of roasted vegetables, rice, or mashed potatoes.
  • Optionally drizzle some lemon juice over the chicken for added zest.

Notes

Make sure to pat the chicken thighs dry before seasoning; this helps the skin to get crispy. Don’t skip the herbs; they add a great flavor. Use a kitchen thermometer to check for doneness, aiming for an internal temperature of 165°F (75°C). Leftovers can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to 3 months.
