  • 2 teaspoons baking powder

  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, combine the milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in any optional mix-ins like chocolate chips or fruit.
  • Fill each muffin cup about 2/3 full with the batter.

Baking

  • Bake for 10-12 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  • Let them cool slightly before serving.

Notes

Pancake poppers are best served warm. Dust them with powdered sugar, drizzle maple syrup, or add a dollop of whipped cream on top. Great alongside fresh fruit or yogurt.
