  • 4 pieces boneless, skinless chicken breasts Pounded to an even thickness.
  • 1 cup freshly grated parmesan cheese Pre-grated won't provide the same flavor.
  • 1 cup panko breadcrumbs For signature crunch.
  • 3 tablespoons butter Melted.
  • 1 teaspoon garlic powder For flavor.
  • 1 teaspoon paprika For seasoning.
  • 1 teaspoon salt
  • 1 teaspoon pepper

Preparation

  • Pat the chicken breasts dry and season both sides with salt, pepper, and paprika.
  • Combine grated parmesan, panko breadcrumbs, garlic powder, and a pinch of paprika in a bowl. Add melted butter to bind the ingredients.

Cooking

  • Heat some oil in a skillet over medium heat and sear the chicken for 2-3 minutes per side until golden brown.
  • Place the seared chicken on a baking sheet, spoon the parmesan mixture over each piece, and press gently to adhere.
  • Bake in a preheated oven at 375°F for about 15 minutes or until the internal temperature reaches 165°F.

Notes

Use a wire rack while baking for even heat circulation. Double-coat with flour for added crispiness if desired. Broil for 1-2 minutes at the end for extra crunch.
