Ingredients
  

Chicken Bites Coating

  • 1 lb boneless skinless chicken breasts or thighs cut into bite-sized pieces
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup breadcrumbs regular or gluten-free
  • 1 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/2 tsp black pepper
  • 2 tbsp olive oil for coating

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Cut chicken into bite-sized pieces.
  • In a bowl, mix Parmesan, breadcrumbs, garlic powder, salt, and pepper.
  • Dip chicken pieces in olive oil, then roll in Parmesan mixture until well coated.
  • Place chicken bites on the baking sheet. Bake for 15-20 minutes, flipping halfway, until golden and cooked through (internal temperature 165°F).
  • Let rest for a few minutes before serving. Enjoy with your favorite dipping sauce.

Notes

Use freshly grated Parmesan for best flavor. For extra crispiness, bake on a wire rack over the sheet. Store leftovers in an airtight container in the fridge for up to 3 days.
