Preparation

  • Rinse the Parmesan rind under running water to remove dust and any wax coating.
  • Cut the rind into smaller pieces (about 2-3 inches) to help release flavors faster.

Cooking

  • In a large pot, combine the water or stock with the Parmesan rind, crushed garlic, and herbs.
  • Bring the mixture to a simmer over medium heat.
  • Simmer for 30-45 minutes, allowing the flavors to blend.
  • Taste and adjust flavors as necessary; if soup is too strong, remove the rind earlier.
  • Once steeped, strain the broth to remove the solids before serving.

Notes

Parmesan rinds can be frozen, so save any leftovers for later use. Avoid using rinds with wax coating.
