For the frosting

  • 1 cup butter, softened For the frosting.

  • 0.5 cups peach slices Fresh slices for garnish.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in the champagne and vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the peach puree.

Baking

  • Pour batter into prepared cupcake liners, filling them about 2/3 full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow cupcakes to cool completely on a wire rack.

Frosting and Serving

  • For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar and mix until smooth.
  • Add the heavy cream and mix until well combined.
  • Frost the cooled cupcakes with peach buttercream.
  • Garnish with fresh peach slices and sparkling sugar.
  • Serve and enjoy the festive flavor!

Notes

Store cupcakes in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Let them come to room temperature before serving. Optional: Pair with additional peach slices and sparkling wine for an extra festive touch.
