Fruit filling

  • 4 cups sliced fresh peaches Fresh peaches can be found at local farmers' markets or grocery stores during the summer season.
  • 1/2 cup sugar Used for the peach mixture.

Batter

  • 1 cup sugar For the batter.
  • 1 cup all-purpose flour Can be replaced with gluten-free flour for a gluten-free version.
  • 1 cup milk Consider using whole milk for a richer flavor.
  • 1/2 cup butter, melted Allow your butter to cool slightly before mixing.
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon (optional) Sprinkle on top for extra flavor.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix the sliced peaches with 1/2 cup of sugar. Set aside for 10-15 minutes.
  • In another bowl, combine the remaining sugar, all-purpose flour, baking powder, and salt. Mix well.
  • Stir in the milk and melted butter until well combined and smooth, about 1-2 minutes.

Baking

  • Pour the batter into a greased 9×13 inch baking dish, spreading it evenly.
  • Spoon the peach mixture over the batter, ensuring an even distribution.
  • If desired, sprinkle cinnamon on top.
  • Bake for 45-50 minutes until golden brown and bubbly.

Serving

  • Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Store leftovers in an airtight container for up to 3-4 days in the refrigerator, or freeze portions for up to 3 months.
