Ingredients
  

Fruits

  • 3 peaches Cut into small slices or cubes
  • 1 mini watermelon Cut into small slices or cubes, seeds removed
  • 1 English cucumber Cut into small slices or cubes
  • 1 cup basil leaves Tightly packed
  • 1/2 cup mint leaves Tightly packed

Dressing

  • 2 tbsp avocado oil Can substitute with olive oil
  • 3 tbsp maple syrup Can substitute with agave nectar or honey
  • 2 tbsp lemon juice Can substitute with lime juice
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions
 

Preparation

  • Cut the peaches, cucumber, and mini watermelon into small slices or cubes. Remove peach pits and watermelon seeds.
  • Transfer all the chopped fruit into a large mixing bowl.

Make the Dressing

  • Blend the avocado oil, maple syrup, lemon juice, basil, mint, sea salt, and black pepper in a blender until semi-smooth.

Combine

  • Pour the dressing over the fruit in the bowl and gently mix to evenly coat.
  • Serve immediately or chill for a short time if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Freezing is not recommended. Use chilled fruits for a refreshing salad.
