Ingredients
  

Peanut Sauce

  • 1/2 cup natural peanut butter
  • 1/4 cup coconut aminos (or tamari/soy sauce)
  • 1 large Juice of lime
  • 2 to 3 tablespoons lime juice additional lime juice for flavor
  • 1 tablespoon pure honey
  • 1 1/2 teaspoons toasted sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon minced fresh ginger
  • 1/2 teaspoon red pepper flakes (optional) add for spice
  • 1/4 teaspoon fine sea salt
  • Warm water (if needed) to adjust sauce consistency

Wrap Filling

  • 2 cups cooked shredded chicken rotisserie chicken can be used
  • 2 cups coleslaw mix
  • 2 cups shredded carrots
  • 2 oz thin rice noodles (cooked) cut into 3-inch pieces
  • 1/2 cup chopped roasted peanuts
  • 1/4 cup chopped fresh cilantro
  • 6 units wraps of choice (tortillas, spinach wraps, egg wraps, or lettuce leaves)

Instructions
 

Prepare Peanut Sauce

  • In a bowl, combine all peanut sauce ingredients. If the sauce is too thick, add warm water to reach your desired consistency. Set aside 1/4 cup for dipping.

Prepare Filling

  • In a separate bowl, mix together the chicken, coleslaw, carrots, noodles, peanuts, and cilantro.
  • Pour the remaining peanut sauce over the mixture and toss well to combine.

Assemble Wraps

  • Divide the mixture among the 6 wraps, roll them up, and cut in half.
  • Serve the wraps with the reserved peanut sauce on the side.

Notes

You can customize the wraps by using different proteins like shrimp or tofu. For a spicier kick, add more red pepper flakes or sriracha to the peanut sauce. If you're short on time, shredded rotisserie chicken works great in this recipe.
