Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, chopped pecans, and salt. Gradually add this mixture into the buttery mixture.
  • Take about a tablespoon of dough and roll it into 1-inch balls.
  • Place the balls on a baking sheet and bake for 12-15 minutes, or until lightly golden.
  • Remove cookies from the oven and let them cool slightly on the baking sheet, then roll them in additional powdered sugar.

Notes

Ensure butter is at room temperature for easier mixing. Don't overbake to keep the cookies soft. For extra powdered sugar adherence, roll cookies warm after baking.
