Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Mix in the vanilla extract.
  • Gradually add the flour and salt, mixing until well combined.
  • Roll the dough into a log and chill in the refrigerator for about 30 minutes.
  • Once chilled, slice the dough into rounds about 1/4 inch thick and place them on a baking sheet lined with parchment paper.
  • Create a swirl with raspberry jam on top of each cookie.
  • Bake in the preheated oven for about 12-15 minutes until the edges are lightly golden.
  • Let them cool on a wire rack before serving.

Notes

Use room temperature butter for a fluffy texture. Chilling the dough is crucial to maintain the shape while baking. Feel free to experiment with different jams.
