Main Ingredients

  • 1 pound cooked chicken, shredded Use rotisserie chicken to save time.
  • 1/2 cup pesto sauce Store-bought or homemade.
  • 12 pieces slider buns Regular or gluten-free.
  • 1 cup mozzarella cheese, shredded Feel free to substitute with other cheeses.
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil For brushing on buns.
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the shredded chicken with the pesto, salt, and pepper until evenly coated.
  • Cut the slider buns in half and place the bottom halves in a baking dish.
  • Spoon the pesto chicken mixture over the bottom halves of the buns, distributing evenly.
  • Sprinkle mozzarella and Parmesan cheese over the chicken mixture.
  • Place the top halves of the buns on and brush with olive oil.

Baking

  • Cover with aluminum foil and bake for 15 minutes.
  • Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.

Serving

  • Pull apart and serve warm, encouraging guests to dig in with their hands.

Notes

Serve with a side salad or potato chips. To store leftovers, use an airtight container for up to 3 days, or freeze for up to 2 months.
