Noodle Ingredients

  • 8 oz wide Lo Mein noodles, cooked and rinsed

Main Ingredients

  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup sliced green onions plus 2 tablespoons for garnish
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha adjust based on spice preference
  • 4 cups coleslaw mix can add other vegetables for flavor

Instructions
 

Preparation

  • Cook the noodles according to package instructions, then set them aside.
  • In a large skillet, brown the ground pork along with 1/4 cup of sliced green onions in the peanut oil.
  • In a bowl, whisk together the chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha.
  • Add the cooked noodles, coleslaw mix, and the sauce to the skillet.
  • Toss everything together for about 2–3 minutes until well coated.
  • Garnish with the remaining green onions before serving.

Notes

Serve warm, topped with extra green onions or sriracha for added kick. Store leftovers in an airtight container in the fridge for 3-4 days.
