Ingredients
  

Noodles and Main Ingredients

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tablespoon peanut oil
  • 1 pound ground pork Can substitute with ground chicken or turkey for a lighter option.
  • 4 cups coleslaw mix Add more vegetables, if desired.

Sauce Ingredients

  • 1/2 cup low-sodium chicken broth Use vegetable broth for vegetarian option.
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce Use tamari for gluten-free option.
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha Increase for more spice.

Garnish

  • 1/4 cup sliced green onions For garnish, divided - use some in the dish and save some for topping.

Instructions
 

Preparation

  • Cook the Lo Mein noodles according to the package directions, then rinse and set aside.
  • In a large skillet, heat the peanut oil over medium heat. Add the ground pork and cook until browned, breaking it apart as it cooks. Stir in 1/4 cup of the sliced green onions.
  • In a small bowl, whisk together the chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha.

Cooking

  • Add the cooked noodles and coleslaw mix to the skillet with the pork. Pour the sauce over everything and toss well to combine.
  • Cook for 2-3 minutes until everything is heated through and coated with the sauce.
  • Garnish with the remaining green onions before serving.

Notes

To store leftovers, let it cool to room temperature, then transfer to an airtight container and refrigerate for up to 3 days. Reheat in a skillet, adding a splash of water or broth if it's too dry.
