  • 2 cups black beans, dried or canned If using dried, soak overnight.
  • 2 medium purple carrots Chopped.
  • 1 cup purple cabbage Chopped.
  • 1 medium onion Diced.
  • 3 cloves garlic Minced.
  • 4 cups vegetable broth For richer flavor.
  • 1 teaspoon cumin For flavor.
  • 1 teaspoon smoked paprika For smokiness.
  • 1 teaspoon chili powder For a little heat.

Preparation of Ingredients

  • If using dried black beans, soak them overnight to soften them.
  • Rinse the soaked beans thoroughly and boil until tender.
  • If using canned beans, drain and rinse them.

Cooking the Soup

  • In a large pot, heat a splash of olive oil and sauté diced onion and minced garlic until fragrant and golden.
  • Add cumin, smoked paprika, and chili powder, and toast for one minute.
  • Add chopped purple vegetables, cooked beans, and vegetable broth to the pot.
  • Bring to a gentle boil, then reduce heat and let it simmer until flavors meld, about 30 minutes.
  • Taste and adjust seasoning with salt, pepper, or a dash of lime juice.

Notes

Customize with regular carrots or red cabbage if purple varieties are unavailable. Add coconut milk for creaminess if desired.
