  • 1 small head small head of green cabbage, thinly sliced
  • 2 large large apples, julienned or shredded Use tart or sweet varieties based on preference

Dressing

  • 1/4 cup apple cider vinegar Can substitute with white wine vinegar or lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup (optional)
  • Salt and pepper to taste

Optional Toppings

  • chopped nuts or seeds For added crunch

Preparation

  • In a large bowl, combine the sliced cabbage and julienned apples.
  • In a separate small bowl, whisk together the apple cider vinegar, olive oil, maple syrup (if using), salt, and pepper until well blended.
  • Pour the dressing over the cabbage and apples, tossing gently to combine all the flavors.
  • Allow the slaw to sit for at least 10 minutes to let the flavors meld and intensify, stirring occasionally for an even coat.
  • Serve chilled or at room temperature, topped with chopped nuts or seeds for added crunch if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Best when prepared before serving or chilled for an hour for a refreshing bite.
