Ingredients
  

For the broth

  • 1 tablespoon sesame oil
  • 3 teaspoons grated ginger
  • 4 teaspoons grated garlic
  • 4 cups broth (chicken or vegetable)
  • 4 cups water
  • 1 ounce dried shiitake mushrooms

For the ramen

  • 2 packages instant ramen noodles
  • 1/2 cup chopped scallions or chives
  • 2 cups chopped kale (or spinach)
  • 1 cup shredded carrots (or bok choy)
  • to taste Sriracha
  • Crunchy golden panko crumbs for topping

Instructions
 

Preparation

  • Heat sesame oil in a large skillet over medium-low heat.
  • Add garlic and ginger; stir fry for 2 minutes until soft and fragrant.
  • Add broth and water, bring to a simmer, then add mushrooms and simmer for 10 minutes until softened.
  • Add instant noodles and simmer for an additional 5 minutes until noodles are softened.
  • Stir in scallions, remove from heat, and mix in kale and carrots.
  • Top with panko crumbs and optional soft-boiled egg.
  • Season with chili oil, hot sauce, sesame oil, and/or soy sauce, and salt to taste.

Notes

Serve your ramen hot, topped with extra scallions, fresh herbs, or a soft-boiled egg for added richness. For leftovers, store them in an airtight container in the fridge and reheat gently.
