Ingredients

Salad Base

  • 1 packet Ramen noodles
  • 2 cups Crispy cabbage, shredded
  • 1 cup Mandarin oranges, segmented
  • 3 stalks Green onions, sliced

Dressing

  • 3 tablespoons Soy sauce Use tamari for gluten-free.
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil Substitute with avocado oil if desired.
  • 1 tablespoon Sugar Adjust to taste.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions

Prepare Noodles

  • Cook the Ramen noodles according to package instructions, typically around 5-7 minutes. Drain and set aside to cool completely, ensuring they don’t stick together.

Mix Salad

  • In a large bowl, combine the crispy cabbage, mandarin oranges, and finely sliced green onions.

Make Dressing

  • In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, salt, and pepper to create a tangy dressing.

Combine Everything

  • Add the cooled noodles to the vegetable mixture. Pour the prepared dressing over everything, ensuring even coverage.
  • Toss all the ingredients together until well combined, taking care not to break apart the mandarin oranges.

Serve

  • Serve chilled as a vibrant side dish that pairs wonderfully with a variety of main courses.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended. For serving, consider garnishing with sliced green onions or sesame seeds.
