  • 2 Tablespoons Olive Oil
  • 4 pieces Bone-in Pork Chops (1-inch Thick)
  • to taste Salt/Pepper
  • ½ Cup Raspberry Preserves
  • 2 Tablespoons Balsamic Vinegar
  • ½ Teaspoon Thyme
  • 1 Teaspoon Minced Garlic

Cooking

  • Heat olive oil in a large cast iron or non-stick skillet over medium-high heat.
  • Season pork chops with salt and pepper to taste.
  • Fry pork chops for 4-5 minutes per side or until just under an internal temperature of 145 degrees F.
  • In a small bowl, combine raspberry preserves, balsamic vinegar, thyme, and minced garlic.
  • Remove pork chops from the skillet and set aside.
  • Reduce heat to medium, then pour the raspberry mixture into the skillet and bring to a simmer. Simmer for 2-3 minutes, stirring frequently.
  • Return pork chops to the skillet and cook for 1 minute per side until they are glazed.
  • Serve hot with extra raspberry glaze on top.

Notes

For best results, do not overcrowd the skillet when frying the pork chops. Consider marinating the pork for additional flavor. You can add Dijon mustard to the glaze for a spicy kick, or substitute chicken breasts for a lighter option. To store leftovers, refrigerate in an airtight container for up to 3 days or freeze for up to 3 months.
