Ingredients
  

For the Cupcake Batter

  • 1 cup peanut butter Use creamy peanut butter for smooth texture.
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For Topping

  • chocolate frosting
  • 12 pieces Reese’s Peanut Butter Cups For topping, one on each cupcake.

Preparation

  • Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • In a mixing bowl, combine peanut butter, sugar, eggs, vanilla extract, baking soda, and salt. Stir until the mixture is smooth and well-blended, about 1-2 minutes.
  • Spoon the mixture into the lined cupcake cups, filling each about two-thirds full.

Baking

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool completely before frosting.

Finishing Touches

  • Top each cooled cupcake with chocolate frosting and place half a Reese’s Peanut Butter Cup on each.

Notes

Serve at room temperature for the best flavor and texture. Cupcakes can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
