  • 2 cups fresh strawberries, hulled and roughly chopped Use ripe strawberries for better sweetness.
  • 1/2 cup freshly squeezed lemon juice (about 3-4 lemons) Roll lemons to loosen juices.
  • 1/3 cup granulated sugar (can substitute honey or agave) Adjust sweetness to taste.
  • 1 1/2 cups water Plain filtered or sparkling for fizz.
  • 1 teaspoon lemon zest Enhances lemon flavor.
  • optional: a few fresh mint leaves, finely chopped Adds a refreshing twist.

Preparation

  • Rinse strawberries, hull them, and roughly chop. Set aside.
  • Roll lemons on the counter to loosen juices, cut and squeeze them to obtain lemon juice.
  • In a small saucepan, combine sugar and 1/2 cup water, warm over medium heat, stirring until sugar dissolves (about 5-7 minutes). Let cool.
  • In a blender, add strawberries, lemon juice, cooled simple syrup, 1 cup cold water, and lemon zest. Blend until mostly smooth but slightly textured.
  • Adjust taste by adding more water or honey for sweetness, or more lemon juice for tartness.
  • Carefully pour mixture into popsicle molds, leaving space for expansion. Freeze partially if molds float.

Freezing

  • Freeze for at least 6 hours or overnight until solid.

Serving

  • Dip molds in warm water briefly to loosen popsicles before removing. Serve immediately.

Notes

For colorful presentation, serve on a platter garnished with mint leaves and lemon slices. Store leftovers in airtight containers to prevent freezer burn.
