Ingredients
  

For the Crust

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Filling

  • 2 cups chopped rhubarb (fresh or frozen) Thaw and drain excess moisture if using frozen.
  • 1 cup granulated sugar For filling.
  • 1/4 cup cornstarch
  • 2 large eggs
  • 1 teaspoon vanilla extract For filling.
  • Powdered sugar for dusting (optional)

Instructions
 

Prepare the Crust

  • Preheat your oven to 375°F (190°C). In a medium bowl, combine all-purpose flour, granulated sugar, melted butter, vanilla extract, and salt. Stir until the mixture resembles wet sand.
  • Press the mixture firmly into the bottom of a greased 9x9 inch baking pan. Bake for about 15 minutes or until slightly golden.

Cook the Rhubarb

  • While the crust is baking, prepare the filling. In a saucepan over medium heat, combine chopped rhubarb with granulated sugar and cook for about 5 minutes, stirring occasionally until the rhubarb begins to soften and release its juices.

Mix the Filling

  • In a bowl, whisk together cornstarch and large eggs. Slowly add the cooked rhubarb mixture, followed by vanilla extract. Mix until everything is well combined.

Bake

  • Pour the rhubarb filling over the pre-baked crust and return it to the oven. Bake for an additional 25-30 minutes, or until the filling is set and slightly golden at the edges.

Cool and Serve

  • Allow the bars to cool at room temperature before cutting them into squares. Dust with powdered sugar if desired.

Notes

These bars are best enjoyed slightly chilled or at room temperature. Serve with a drizzle of cream or a scoop of vanilla ice cream.
